Hawaiian Macaroni Salad

One of my favorite summer time side dishes to make for guests. They rave about it every time and we usually have no leftovers.

The sweet and tangy flavor makes it the perfect match for Sweet and Smoky Ribs, but it’s also delicious alongside and hot dogs, grilled chicken, and pork chops. 

A perfect side for your backyard grilling or picnic.

Where did Hawaiian macaroni salad come from?

It’s hard to believe that a dish made primarily of macaroni and mayonnaise originated in the Aloha State, but by most accounts, it did! The story behind Hawaiian macaroni salad is debatable, but many believe the creamy “salad” was invented around the 1900s when Europeans introduced mayo and elbow macaroni to the island. In Hawaii, the dish is usually served on a lunch plate with saucy meats and rice. 


What is in Hawaiian macaroni salad?

It’s the easiest dish ever: just cooked pasta, grated carrot and onion, a little bit of celery and sliced green onion, and the perfectly sweet, tangy, creamy dressing. 


Can Hawaiian macaroni salad be made ahead of time?

Sure thing! Feel free to make it a day ahead, but just know that you might need to stir in a tablespoon or two of milk the next day to loosen it up. Wait to garnish it with more green onions until just before serving. It’ll last three to four days in the fridge, total.

  • 8 oz elbow macaroni cooked and chilled
  • 1 ¼ cup mayonnaise
  • 1 tsp salt
  • ¼ tsp ground pepper
  • ½ cup chopped celery
  • cup chopped green onion
  • ¼ cup grated yellow onion
  • 2 hard boiled eggs chilled and diced
  • 2 pounds potatoes cooked, chilled, cubed
  • ¼ cup pickle relish
  • ¼ cup grated carrots


  • Mix ingredients together and chill for 30 minutes. Serve when ready¼
